I grew up in a fairly health conscious household. We rarely ate pork and if we did it was the most boring, leanest cut possible. And then I discovered sausage and went on a little bit of an overload. I eat it with eggs. I eat it on pizza. And now I eat it on tacos.
It's a very simple recipe as sausage is already seasoned. I hope you enjoy!
6 chorizo sausages
8 hard shell tacos (I prefer hard corn shells but this is a point of preference)
1/2 cup of queso fresco
1. Warm a tablespoon of olive oil in a medium sauce pan
2. Using a scissor, cut the top portion of the sausage off and squeeze the meat out of the casing
3. Just as you would with ground meat, keep mixing the sausage as it cooks. Ensure that there is no pink
4. Drain the oil
5. Serve with salsa, queso fresco and anything else you like to add to tacos
